A Few Steps To A Delicious Meal

Mixing a few key ingredients goes a long way to make a dish you can enjoy at home anytime.

Seafood lovers will devour this simple, yet tasty dish. Fancy restaurants aren’t the only place to have a seafood pasta dish. With a few ingredients and easy steps, you’ll have an exotic dish on your kitchen table in no time and at a fraction of the price. It’s a great presentation dish for a night of company, or for a nice alternative to a typical weekly dinner. Here is what you'll need for this flavorful recipe:

Simple Seafood Pasta

Ingredients:

  • 1 can of diced tomatoes (crushed with hand blender)
  • 5 clove of garlic (crushed with a garlice presser)
  • 1 cup of extra virgin olive oil
  • 1-2 teaspoons of cayenne pepper (depending how spicey you want it)
  • 1 small to medium sized package of shrimp
  • 1 small to medium sized package of baby scallops
  • salt and pepper (for taste)
  • linguine pasta or any other long or short pasta of your choice
  • optional: fresh parsley (chopped finely)

Directions:

  1. Place clean, de-shelled shrimps in a large bowl along with baby scallops
  2. In a seperate small bowl, mix olive oil, crushed garlic, and cayenne pepper. Once mixed, pour over the bowl of shrimps and scallops. Cover, and refrigerate fish for at least 1 hour so that fish have enough time to marinate
  3. When ready to cook, saute the fish in a large non-stick pan or wok over medium heat for approximately 15 minutes. You will know when shrimp are cooked thoroughly because they will change color. When shrimp turn a pinkish color, they are fairly cooked
  4. Add the can of crushed tomatoes, salt and pepper to the pan, stir well and cook over medium heat for 20-30 minutes
  5. While fish and sauce are cooking, bring a pot of water to a boil and cook pasta according to the cooking time directed on the box. Drain pasta well after cooking
  6. Pour mixture over cooked pasta, serve and enjoy!

Serve With:

Sprinkle some grated parmesan cheese over pasta to add some more flavor to this rich tasting dish. You can also sprinkle some freshly cut parsley for color and even more extra flavor.

Seafood is always a nice treat, no matter how it’s made. Mixing seafood with a tomato sauce based pasta is a perfect combination for a great tasting meal. Pairing a basic tomato sauce with shrimp and scallops are the best of two favorite dishes put together. Don’t be afraid to add some vegetables to this dish if you prefer to. Eggplant or mushrooms work best, but any alternative would work. Saute these vegetables with a bit of olive oil in a seperate non-stick pan and add to the rest of the ingredients 5 minutes before the cooking time. Enjoy!
